Ingredients:
- Two avocados - chopped
- Two persian cucumbers - chopped
- One apple - peeled, cored and chopped
- 1/4-1/2 cup chopped red onion
- 1/4 cup finely chopped parsley
- 1 - 2 cups chopped spinach
- 1/2 cup mayonnaise
- Mix all ingredients together
- Add mayonnaise and season with salt and pepper
