Waffles with Caramel Sauce

For the Caramel Sauce:
1 1/2 cups sugar
1/3 cup water
1 1/4 cups heavy cream
1/2 teaspoon vanilla

  1. Dissolve sugar in water over med heat. Cook the sugar until it starts changing color - do not stir, otherwise crystals will form on the side of the pan and the caramel sauce will not be as smooth.
  2. Once the the sugar turns golden, add heavy cream. Stir until the cream and dissolved sugar combine (this may take a few minutes).
  3. Turn off the heat and add vanilla. 
  4. Let caramel sauce cool and keep it stored in the fridge.

For the Waffles:
2 cups flour
1 tablespoon sugar
1 teaspoon yeast
pinch of salt
2 cups milk
1 large egg

  1. Combine, 1/2 cup flour, sugar, yeast, and 1/2 cup milk. Let mixture stand until for 10-20 minutes (or until the yeast begins to divide).
  2. Add remaining flour and milk along with the salt. Mix and cover with plastic wrap. Let dough rise overnight.
  3. In the morning, preheat oven to 200F and turn on the waffle maker.
  4. Add melted butter and egg to the dough.
  5. Cook waffles until the steam stops pouring out of the waffle iron. Keep waffles warm and crispy in the preheated oven.
  6. Serve with butter and homemade caramel sauce.
